Chocolate Power Muffins
Ingredients
- 1 cup Fresh Spinach Leaves
- 100 g Blackstrap Molasses
- 40 g Olive Oil
- 60 g Milk
- 1 tsp Pure Vanilla Extract
- 180 g All-purpose Flour
- 25 g Cocoa Powder
- ½ tsp Baking Powder
- ½ tsp Baking Soda
- ½ tsp Fine Sea Salt
- ½ cup Dark Chocolate
Instructions
- Preheat your oven to 180°C. Grease or line a muffin tin
- In a blender or food processor, combine the spinach, molasses, olive oil, milk, and vanilla extract.
- In a bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
- Add the wet ingredients from the blender into the bowl of dry ingredients, stirring until combined into a batter. Fold in some cut up pieces of dark chocolate here too.
- Fill each muffin cup two-thirds full with the muffin batter.
- Bake in the preheated oven for approximately 30-40 mins or until a toothpick/fork inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
